Among the typical dishes of Chiapas there is a long list of tamales, the most common are chipilín tamales and tamales de bola, but iguana tamales are another level.
But for all that, is the iguana tamale what we think it is? Well yes, the iguana tamale is like a normal tamale, that is to say it is made with masa, but instead of chicken or pork meat it is filled with iguanas.
But before you make a bad impression on our friends from Chiapas and compare them with our countrymen from Monterrey, I must point out that in the state of Oaxaca there is also this dish and it is common to see it during Holy Week.
